Sweet Potato Chipotle Soup Recipe
Warm things up this winter with this delicious soup recipe from Dishes that’s both elegant and easy. Swap out the dairy-base for soy or rice milk for a vegan version of this healthy soup recipe that’s as sweet, smoky and smooth as the original.
Sweet Potato Chipotle Soup Recipe
1 tablespoon unsalted butter (or vegan alternative)
2 cups yellow onions, chopped
4 cloves garlic, chopped
8-9 medium (3 pounds) sweet potatoes, peeled and coarsely diced
1⁄2 cup half and half, cream or milk of choice (vegan varieties work too!)
2 tablespoons jarred chipotle peppers, pureed
Salt to taste

In a large pot, over medium heat, sauté onions and garlic in butter until soft and lightly golden. Add potatoes and just enough water to cover the potatoes before bringing to a boil. Simmer for 25 to 30 minutes, or until potatoes begin to fall apart. Add milk, spices and pureed chipotle and blend with an immersion handheld blender (or transfer to a standing blender, if needed). Garnish with toasted pumpkin seeds, if desired and serve warm.
